A Dash of This, a Splash of That: Matt’s Lamb Chops + Our 2022 Malbec

At Frichette, some of the best pairings come from the people gathered around a table tasting wine. During our Reserve Cru “Roll out the Barrel” tasting experience, we were pouring our new 2022 Malbec when wine club member Matt took a sip, paused, and then casually shared out loud, “This would go great with my lamb chops.”


Of course, when you share a great wine and food match in a room of wine and food lovers, people are going to lean in—and that’s exactly what happened. Our other guests were intrigued. “What’s your recipe?” someone asked. Matt grinned and shrugged, “Well… I don’t really measure anything. It’s more of a dash of this, a dash of that.”


But because so many folks were interested, we asked him to write down the gist of his lamb chop recipe. True to his style, there are no exact measurements—just good instincts, great ingredients, and a lot of flavor. And trust us when we say: it pairs beautifully with our 2022 Malbec.


Malbec is known for its bold character, juicy dark fruit flavors, and smooth tannins, making it a fantastic partner for grilled meats, especially lamb. Our 2022 Malbec showcases notes of blackberry, plum, and a hint of spice, with a rich mouthfeel that beautifully complements the savory, smoky flavors of Matt’s lamb recipe.


We’re currently offering an early taste of this Malbec exclusively to our Reserve Cru members. Everyone else—don’t worry! It will be officially released next month, and we can’t wait for you to try it with this dish.


Here’s how Matt makes his unforgettable lamb chops:


Matt’s Lamb Chops (Wine Club Style) (No measurements, just vibes)

Bone-in, center-cut lamb chops, brush with olive oil, and Season with:

  • Kosher salt

  • Black pepper

  • Onion powder

  • Garlic powder

  • Ground cumin (just a little bit)

  • Fresh-squeezed lemon juice (optional)


Grill to your liking

Matt prefers medium-rare. Gas grills work fine, lump charcoal is okay, but a lump charcoal/wood mix? That’s his favorite. He hasn’t tried it in a smoker, but thinks that could be a great option too.


Suggested sides:

  • Roasted gold potato wedges

  • Sautéed asparagus

  • Mixed greens (spring mix) salad with vinaigrette


Matt mentioned he typically pairs lamb with Carménère, and while our 2021 Carménère does the job deliciously, he said he might just like the 2022 Malbec even better with this dish.
