Amazingly Easy Carne Asada paired with Frichette 2020 Malbec

Ingredients needed:
2 pounds skirt or flank steak
1 cup cilantro leaves and stems finely chopped (save some cilantro leaves for garnish)
½ cup Olive Oil
½ cup freshly squeezed orange juice (or use whatever fresh orange juice you have on hand)
½ cup freshly squeezed lime juice (2 limes)
3 tablespoons honey
2 tablespoons of Mexican Oregano or other Oregano (I use Penzeys Mexican Oregano)
4 cloves of garlic
1 serrano chili (seeds removed) *if you are not familiar with this pepper it looks like a jalapeno, remember to wash your hands after removing the seeds, add another pepper if you love spicy Kosher salt and freshly ground pepper
2 limes cut into wedges for serving or garnish
Instructions
Place steak in a large glass bowl or resealable plastic bag.
To make the marinade, add the cilantro, olive oil, orange juice, lime juice, honey, oregano, garlic, and serrano chili to the blender. Season with a small pinch of salt and pepper. Blend for 35 to 40 seconds to combine.
Pour marinade all over the steak, moving it around to ensure everything is covered. Cover or seal and transfer to the fridge and allow to marinate for at least 1 hour, but no more than 6 (too long in the marinade will cause the steak to begin to break down)
Preheat your grill or grill pan over medium-high heat.
When ready, remove the steak from the marinade, letting the excess drip off. Sprinkle generously with salt and pepper and grill for about 4 to 6 minutes per side for medium.
Remove to a cutting board and allow to rest for 5-7 minutes. Slice the steak against the grain and serve with lime wedges.
We make amazing street tacos with this carne asada. Just grab an avocado, pico de gallo, cotija cheese, and your favorite Mexican street corn (You can usually find this in your grocery freezer section). YUM!
